This is a wonderful salad. It is so easy and simple to make. It has a very tangy and sweet flavor. It goes well with fish, seafood and chicken dishes. My family loves this salad is because of it crunchiness of the nuts and fried chow mein.




Serve 12

2 cups thinly sliced red cabbage

5 cups thinly sliced green cabbage

2 carrots, julienned

2 cups napa cabbage

2 red bell peppers, thinly sliced

½ cup chopped fresh cilantro

6 green onions, chopped

2 tablespoons minced fresh ginger root

1½ tablespoons minced garlic

5 tablespoons creamy peanut butter

3 tablespoons brown sugar

3 tablespoons light soy sauce

6 tablespoons rice wine vinegar

6 tablespoons canola/vegetable/corn oil



Toasted black sesame seeds

Roasted cashew nuts

Sliced almonds

Asian fried strip crisps



Place ginger, garlic, peanut butter, brown sugar, light soy sauce, rice wine vinegar

Canola/vegetable/corn oil in a glass mixing bowl and whisk together vigorously.

Mix the red cabbage, green cabbage, carrots, napa cabbage, cilantro, red bell peppers and green onions in a large salad bowl. Pour the peanut butter mixture just before serving and toss gently.

Garnish with all or one/two of the garnishes listed.
