Bacon Spam Potato Chowder

During this time, I always make soups for my husband. Soups are also one of his favorite dishes. This soup is very easy to make and also a hearty meal for the cold weather. Well, earlier, I did post a soup dish and a slight different from this one. I hope you will enjoy this as much as the other one.




1 (12oz) can Bacon Spam, diced

1 pound baby potatoes, cut into small chunks

1 small yellow onions, peeled and chopped

¼ cup finely chopped fresh parsley

½ cup finely chopped celery

1½ cups half and half

12 oz condensed chicken broth

1 cup water

¼ teaspoon ground black pepper

Salt to taste

1¼ tablespoons salted butter/olive oil



Heat a saucepan with butter over medium heat, add onions and celery and saute until tender. Stir in diced spam meats and sauté for 2 minutes. Add diced potatoes, ground pepper, stir constantly, add water and chicken broth. Stir and cover, simmer for 10-12 minutes or until potatoes are cook and tender. Gradually, stir in half and half and finely chopped parsley, and continue simmering until heat through. Serve with some soup oyster crackers, toasts or saltine crackers.
