MAKES 11/2 CUPS
INGREDIENTS:

1 cup shoyu (Japanese Soy Sauce)
4 teaspoons mirin
4 teaspoons rice wine vinegar

METHOD

In a saucepan mix soy sauce, 2/3 cup water, mirin and rice wine vinegar and bring to boil on a medium heat. Remove from the heat and let it cool. It can be kept in the refrigerator for 2-3 days.

INGREDIENTS:

1 packet frozen grated white coconut, thaw well
4 red finger chilies
1/2 teaspoon tamarind paste
2 teaspoon canola oil
4-6 curry leavesSalt to taste

METHOD

Heat frying pan and roast red chilies and curry leaves in oil for about 4 minutes. Mix with the grated coconut and salt. Use a food processor/pestle and mortar to grind the mixture into a fine paste. Store in a airtight container and refrigerate.
