INGREDIENTS:

1 packet frozen grated white coconut, thaw well
4 red finger chilies
1/2 teaspoon tamarind paste
2 teaspoon canola oil
4-6 curry leavesSalt to taste

METHOD

Heat frying pan and roast red chilies and curry leaves in oil for about 4 minutes. Mix with the grated coconut and salt. Use a food processor/pestle and mortar to grind the mixture into a fine paste. Store in a airtight container and refrigerate.
