Golden Raisins have always been my favorite fruit. I love to eat in any way…fresh or raw or cooked or pickled or dried. Recently, I went to an Indian Grocery store and got some dried golden raisins at a good price. I ate some of them and the rest I decided to cook them. So, the next day, I made this into a sweet dish.
My grand-daughter, Jade came over for a visit and we both had a great time together. She is my little helper in my kitchen, helping me to bake, grocery shopping and table-setting. She and I shared baking this dessert and she did all the mixing and putting the batter into the paper cups. This dessert turned out well. It is a very easy muffin to bake. Two nights ago, I made this dish for dessert and shared with family. In Southeast Asia, this is a very popular dessert/snack using over-ripe bananas. It is so easy and flavorsome.
