Cheddar Broccoli Bacon and Egg Muffins

I did this dish on New Year Day morning for breakfast. I was glad that I did it as my family enjoyed it. It is easy to make and save you time in everyday busy morning. It is a good breakfast dish for children if they are fussy about eating vegetables and meats. They will not realize or notice what they were eating as the crispiness give out a strong fragrant alike cakes.

 

 

Ingredients:

6 large eggs

9 strips center-cut bacon or 5 strips bacon cut into half

¾ cup shredded sharp cheddar

1½ cups fresh broccoli/frozen broccoli (defrosted), steamed, coarsely chopped

¾ teaspoon salt

¾ teaspoon black pepper

¼ teaspoon cayenne pepper (optional) or Tabasco/hot sauce of your choice

 

Method:

Preheat oven to 375°F. Line a 12-muffin pan with one strip whole/half-cut bacon around each muffin hole.

Place in a mixing bowl with eggs, chopped broccoli, salt and black pepper, and cayenne pepper/Tabasco/hot sauce or without. Whisk all to combine well.

Pour the egg mixture into each bacon lined muffin hole and sprinkle shredded Cheddar cheese evenly on the each muffin.

Transfer to the preheated oven and bake for 12-15 minutes or until the egg mixture is set or bacon are lightly brown. Let it stand for 5 minutes and then remove from the muffin pan. Serve with some favorite fruits/salad.
