After learning how to prepare hummus from my Jewish friend who introduced me to this great vegetarian dish, I begin to venture more into new variations on these chickpea beans. Of course, my husband is the one that enjoyed hummus dishes with various taste. This is one of his favorite.
1½ cans chickpeas, drain
½ cup packed chopped cilantro, set aside a few leaves
2 cloves garlic, peeled
½ cup tahini
3 tablespoons lemon juice
Salt to taste (optional)
3 tablespoons olive oil
Place all the ingredients in a food processor/blender and puree till smooth.
Season with salt (optional). Sprinkle some smoked paprika/sweet paprika. You may serves this dish as a appetizer with cut cucumbers, tomatoes, pita bread, flat bread or as it is.
