Coconut Macaroons

I am posting one of the 3 desserts I made on Christmas Day 2010. I felt I should make something new, so I came up with 3 new desserts to add in to my usual desserts, Pineapple Tarts and Marble Raspberry Cheesecake. The new desserts were Tiramisu, Coconut Macaroons, Cranberry & Pear with Candied Ginger and Apricot Folds. All the desserts came out well and I am very pleased with them. Hope you will try one or all these recipes in your own kitchen. Enjoy!!! 


Ingredients:
3 cups Sweetened Flaked Coconut
2 jumbo eggs
½ cup fine sugar
1 teaspoon vanilla extract
3½ tablespoon salted butter, melted and cooled
Method:
Preheated oven to 350 degrees F.
In a medium mixing bowl place eggs and fine sugar and beat with a electric beater until the eggs are light yellow color and also thick texture. Add sweetened flaked coconut and melted butter; lightly mix until all are well incorporated. Set aside for the coconut batter to rest for 5 minutes.
Meanwhile, line the cookie pan with parchment paper.
Use an ice-cream scoop and drop spoonfuls of coconut batter onto the prepared cookie pan. Bake on the center oven rack for about 15-18 minutes. Cool on the pan for 5 minutes and then transfer to a wire rack to cool completely. Store in a airtight container.
