I love chicken salad and croissants and also enjoy to eat them separately. I always love the chicken salad to be a little sweeter and fruitier, so I always add it with dried cranberries, cherries, raisins or currants into my chicken salad. Also I love it with lot of mayonnaise. Well, you do not have to follow the exact amount of dried fruits or mayonnaise. Just add enough for your taste buds. It is also a good snack to serve at holidays and family gatherings.
4½ pounds chicken breast, skinless and boneless, diced
½ cup roasted/toasted sliced almonds
1 cup dried cranberries
½ cup finely chopped celery sticks
¾ cup organic mayonnaise
1/8 teaspoon ground black pepper
1/3 teaspoon salt
3 teaspoons whole milk
10 large croissants; split halved but not cut all through
Combine diced chicken, sliced almonds, dried cranberries, celery sticks in a mixing bowl. Stir in the mayonnaise, black pepper, salt and whole milk and toss the chicken mixture gently until well combined.
Spread about ½ cup chicken mixture on the croissant, continue filling until all the croissants are all filled. Serve with some chips, fried potatoes/sweet potatoes.
