Cucumber Raita

Another famous and popular dressing/dipping dish (that’s what I called it) in the Indian cuisine. There are many variations of making this dish but the cucumber base is the most common one that most of the users like. It is very simple to make and quick. It goes well with rice and roti (Indian bread). You can try making a just plain with some chili flakes and cilantro or with some fried dough like vadas and pakodas. INGREDIENTS
3 Japanese cucumbers, peeled and shreddred
1 1/2 cup plain yoghurt
2 tablespoons warm water
3 teaspoons raita masala
1/4 cup cilantro, finely chopped
Salt to taste
Pepper to taste
Paprika, to garnish
METHOD
In a serving bowl mix the shredded cucumber, yoghurt and warm water and whisk it well. Add the raita masala, cilantro, salt and pepper and mix until smooth. Garnish with paprika and black pepper (optional)
