Ikan Bilis is a Malay/Indonesian word for dried anchovies. Anchovies are small, green fish with blue reflections due to a silver long stripe that runs from the base of the caudal fin. It has a very slim body shape. In Southeast Asian countries, dried anchovies are used to make fish stock or sambal (chili pastes/curries) or deep fried. In countries like Vietnam, Cambodia and Thailand, they use anchovies to make fish sauce…known as “Nuoc Mam”
