Fried Ikan Kunning (Fried Yellow Strip Fish)

This morning, I ventured to a new part of my hometown, Bridgeport, CT and came across Ikan Kunning (Yellow Strip Fish) in the freezer section. “Nasi Lemak” popped out from my head…later in the evening my family members were enjoying these fried fish.

2 pound frozen Ikan Kunning, thaw, cleaned and discard the heads
1 tablespoon sea salt
Canola/vegetable/corn oil for frying
Marinade the Ikan Kunning in a mixing bowl with salt. Let it stands for at least half an hour.
Heat the canola/vegetable/corn oil in a frying pan or wok over medium heat. Add about 6 pieces at a time and fry until golden brown. Continue frying until all the fish are done. Drained onto a kitchen paper towels. Using we use this dish to accompany with Nasi Lemak (Coconut Rice). You may just eat them as it is.
