Grilled Cheese, Egg and Spam Sandwich

My son loves grilled cheese sandwich and while I was in NYC after returning from my Thailand trip I prepared this sandwich for him as he is one of my food taster. It is very easy and a comfort food for most young people.

I was glad that he loved it and surprising he requested for one more after just finished a sandwich. Well, I would like to share this recipe with all of you if you like grilled cheese with a surprise ingredient – Spam (Luncheon Meat).




12 slices wheat/white sandwich bread

1 can any flavor Spam (Luncheon Meat) of your choice, sliced thinly into 12 pieces, divided

6 large eggs

6 slices cheddar or American or other cheeses of your choice

Butter, softened for spreading on the breads

Canola/vegetable/corn oil for pan frying



Heat a frying pan/skillet over medium-high heat. Place the thinly sliced Spam (Luncheon) meat and lightly fry, turning one for about 5 minutes. Removed and set aside until use.

Return the frying pan/skillet to the heat and cook each egg to your desired doneness. Remove the cooked eggs to a plate.

Heat a crepe pan over medium heat. Spread one side of the sandwich bread with softened butter. Place in pan with butter-side-down, top with 1 slice cheese, 2 slices Spam (luncheon) meat, a fried egg and then top with another slice of cheese.  Cover the unbuttered side bread on top of the cheese. Turned over and press lightly and pan-fry until both buttered sides are lightly toasted and cheese melted.
