I chose this recipe to share with all of you and as for me this is also a unique salad/starter to serve my/your families, relatives and guests over the Christmas dinner.
This is my first time attempt to do this recipe and I am glad that the taste is so tasteful and also very refreshing. Give this recipe a try and let me know what you think.
1½ cups sweet cherry tomato, washed and halved
1½ cups mango chunk
¾ cup finely chopped red onions
1½ tablespoons coarsely chopped cilantro leaf
3 tablespoons finely minced fresh peppermint/spearmint leaf (I prefer peppermint)
Salt to taste
Grated black pepper to taste
5 tablespoons pure virgin olive oil
¾ cup store-ready pure mango juice
1/8 teaspoon amchur powder (dried mango powder)
1/8 teaspoon clove powder
1/8 teaspoon hot chili powder (optional)
1/8 teaspoon coriander powder
1 ½ tablespoons fresh lemon juice/store-ready lemon juice like “Realemon”
Salt to taste
Grated black pepper
In a mixing bowl with olive oil, mango juice, lemon juice, amchur powder (dried mango powder), clove powder, hot chili powder (optional), coriander, salt and pepper and whisk the mixture very vigorously until well combined. Set aside.
Place the cherry halves, mango chunks, red onions, chopped cilantro leaves and peppermints/spearmints and toss until well combined. Add in the mango dressing and with a spoon and fork and toss all together. Taste the seasoning and if you need more extra salt and black pepper, this is the time to do so. Cover and side aside to stand for 5-8 minutes before serving. Serve the salad in a cocktail/champagne glass/salad plate.
