There are many different varieties of leeks. Leek has a mild onion-like taste that described as a mixture of mild onion and cucumber with a sweet smell like scallion. The edible portions of the leek are the white onion base and part of the light green stalk.  The dark green portion is always discarded because it bitterness. When it is raw, the leek is crunchy and firmed. There are many ways of preparing the vegetable. It can be boiled, fried or eaten raw in salad. In the western cuisine, leeks are normally used for cock-a-leekie soup, Vichyssoise soup and leek and potato soup. In Asian Cuisines, leeks are usually stir-fry with seafood & meats.
