Macaroni Salad

Well, I am not a lover of Mac and Cheese but Macaroni Salad is also one of my favorite. It seems strange to many people in America because most young kids are brought up with one or two favorite (s) comfort food like spaghetti with meat sauce, cheese/pepperoni pizza, hot dog and many more. It is one of most easy dish to prepare and simple.




3 cups elbow macaroni

1½ cups finely chopped celery (optional)

6 hard boiled eggs, shelled and chopped (optional)

3 tablespoons finely chopped yellow onion

1½ cups finely diced carrot

1 cup finely diced red pepper, seeds and stem removed



1½ cups real mayonnaise

4½ tablespoons sweet pickle relish

3 tablespoons prepared mustard

1½ teaspoons salt



Cook the raw macaroni according to the manufacturer’s instruction. Drain and rinse in cold water in a colander till completely dry. Set aside to cool completely.

In a large mixing bowl with yellow onions, carrots, red pepper and salt. If you are using celery and hard boiled do add them now. Stir to combine all the ingredients well. Add in the cooked macaroni. Stir in dressing ingredients and blend all well.

Transfer to a serving bowl. Store in a sealed container up to a week when you store it in the refrigerator. To moisten the macaroni salad, just simply add in a couple tablespoons of mayonnaise. Stir well to combine. It goes well any BBQ meats and even any fried seafood, chicken and hamburgers.
