Mashed Potato

Mashed potato is always a comfort food for almost everyone but not to the Southeast Asian countries. In these countries, they will make them more flavor-able by adding minced meats or strongly spiced. They will turn them into patties and cakes. My son and I are the only ones that love mashed potato. We love it with homemade gravy to go with it. My mashed potato is very easy and simple to prep. So give it a try.

8 Idaho potatoes, peeled and quartered
1 cup chicken broth
¼ cup butter
Salt to taste
1teaspoon freshly ground white pepper
4 oz sharp white Cheddar, grated
In a large stockpot, cook potatoes in enough salted water to cover for 12 to 15 minutes or until tender enough to mash.
Drain and return to stockpot. With an electric mixer beat the cooked potatoes until smooth; adding salt to taste, ground white pepper, butter, and chicken broth. Stir in grated cheese. Correct the seasonings (add more salt and white pepper, if necessary). Serve immediately.
