Mixed Candied Fruit and Peel Bismuffin

I made these biscuits during last Christmas Day dinner. Every year I will made biscuits into a shape of a turkey but this time I switched them into fruitcake-like muffins. Well, I am glad that I did as my family and friends loved them. It is easy and fast to make them.

 

 

Ingredients:

3 cups All Purpose flour

1 ½ tablespoon baking powder

¾ teaspoon salt

¾ cup shortening

1 1/8 cups whole milk

1 ½ cups mixed candied citrus fruit and peel (fruits use for making fruitcake)

 

Method:

Preheat oven to 450°F. Grease lightly 1-2 muffin trays depending on your size of your muffin.

In a large mixing bowl sift together AP flour, salt and baking powder. Cut in the shortening with a pastry blender or knife until flour mixture resembles crumbs.

Combine flour mixture and whole milk and stir together to form a soft dough.

Turn dough out onto a lightly floured surface and add the mixed fruits and peel; and knead briefly until well combine and not sticky, about 8 times.

Lightly roll dough out into ½ to ¾ inch thick and cut with a 2-2½ inch biscuit cutter. Gently roll each into a ball. Repeat by gathering unused dough, roll, cut and roll into a ball. Place the biscuit ball individually on the greased each muffin cup and transfer to the preheated oven and bake for 8-10 minutes or until golden brown.
