As I have mentioned in my last post that I will be writing what I will be serving for the gathering. Well, I will prepare a couple of starters, appetizers, entrees, desserts and side dishes.

This is one of the dishes I will be serving to my guests. It is easy and fast to prepare and in no time you will be able to keep your guests enjoying while waiting for the main meal.

Serves 10-12

50-60 cracker rounds of your choice

12oz store-ready thinly sliced smoked salmon, cut into serving bite size to fit the cracker size.

1 container of herb cream cheese of your choice (I used chive & onion)

2¼ tablespoons fresh lime juice

½ tablespoon olive oil

Grated/ground black pepper

5 tablespoons chopped fresh chives

Halved sweet cherry tomatoes/Lime wedges for garnishing

Meanwhile, whisk vigorously the lime juice and olive oil together in a small mixing bowl and set aside.

Place the round crackers in a single layer on a serving platter. Spread your favorite cream cheese on each cracker and top with a bite size smoked salmon. Brush the lime mixture on top of each salmon. Season with some grated black pepper. Sprinkle chopped chives and garnish with some sweet cherry tomatoes/lime wedges.
