Spam Potato Skins

This is one of my son’s favorite dishes with Spam. He loves any flavored potato skins. Well, I replaced the ingredient, bacon to Spam in his potato skins. I personally was very surprised by this dish as this is my first to add Spam into the shredded cheese but the result was overwhelmed. I can assure you that you will also like this way too than the usual potato skins. Give them a try.

 

 

Ingredients:

6 baking potatoes, cleaned and halved

2 tablespoons unsalted butter, melted

1 (12oz) can Hot and Spicy Spam, drained and finely diced

1 bottle/package RealBacon Brand real bacon bites

1 large package of shredded mild/sharp cheddar cheese

1 cup chopped green onions

 

Method:

In a microwaveable plate/bowl place the baking potatoes and cover with damp kitchen paper towels; and microwave on high for 2 minutes. Remove and let to stand for 3 minutes.

Meanwhile, heat a frying pan/skillet with diced Spam meat over medium and sauté until golden brown.

Use a spoon and scoop out the insides of the potato and leave ½” thick.  (Save the potato flesh for other use). Brush melted butter onto the potato boats.

Preheat oven to 400°F.

In a small bowl, add golden brown diced Spam meats, bacon bites, shredded cheddar cheese and chopped green onions. Fill spoonful of the Spam meat mixture into the potato boats. Continue until all the potato boats are done. Transfer to a baking sheet and then to the preheat oven and bake for 20 minutes or until the tops are golden brown.
