Spicy Spam Potato Chowder

This is a very simple and quick soup to have during the Fall and Winter seasons. It is very hearty hot and spicy soup to warm your days or nights. It also takes no time to make this soup. I personally love this soup. This happened to me one cold winter when I was not so well and feeling of wanting a spicy and warm cream soup to crave my hunger and I decide to add some spicy spam as my clam meats to add to the chowder. I was glad that I did as it turned out really well and good.




1 (12oz) can Spicy Spam, diced

1 pound baby potatoes, cut into small chunks

1 small yellow onions, peeled and chopped

¼ cup finely chopped fresh cilantro leaves

2 tablespoons chopped laksa leave (daun kesom/Rau ram)

½ cup finely chopped celery

1½ cups coconut cream

12 oz condensed chicken broth

1 cup water

¼ teaspoon ground black pepper

Salt to taste

1 teaspoon chili powder/Extra hot chili powder/red curry paste

1¼ tablespoons canola/vegetable/olive oil



Heat a saucepan with butter over medium heat, add onions and celery and saute until tender. Stir in diced spam meats and sauté for 2 minutes. Add diced potatoes, ground pepper, stir constantly, add water and chicken broth. Stir and cover, simmer for 10-12 minutes or until potatoes are cook and tender. Gradually, stir in coconut cream and finely chopped laksa leaves, cilantro, chili powder/curry paste, salt, and continue simmering until heat through. Serve with some soup oyster crackers, toasts or saltine crackers.
