Steamed Glutinous Rice with Red Peanuts

I always love using glutinous rice/black rice more than any rice. Well, this dish is very simple and nutritious meal as it consists of rice and beans. You can even use this to serve as a snack by molding into different shapes to make it looks fancy.




3 cups glutinous rice, soaked overnight

1 cup red peanuts, soaked overnight

Pinch of salt and sugar

Some shredded coconut (optional)

Roasted sesame seeds (optional)



Washed and drained well with the glutinous rice and pour onto a Vietnamese steaming basket/aluminum steamer rack lined with a muslin cloth.

Heat a pot with water sufficient to cover the red peanuts over medium-high heat and bring to a boil. Continue cooking until the red peanuts are tender. Transfer to a wire sieve and drained well. Toss the tender red peanuts into the glutinous rice and mix well.

Meanwhile, preheat a steamer with sufficient water over medium heat.

Transfer the glutinous rice mix to the steamer and reduce the heat to medium-low heat. Continue to steam until the mixture is totally tender and soft. Stir in some sugar with a pair of chopstick to stir until combine. Season with salt (optional).

Turn heat off and serve it hot or cold on a serving dish. Garnish the top with some shredded coconut and toasted sesame seeds (optional).
