Sweet Potato Souffle

I am a lover of sweet potatoes. I always like to try new ways of cooking the sweet potatoes. Every festive holiday, there will always be a dish of sweet potatoes. It can be served as a vegetable or as a dessert. This is a very easy soufflé to make. You need not have to be very careful in handling and baking this soufflé not like any other soufflé. I can assure you that your family and guests will love them. Give this a try in your next party. 

2 sweet potatoes, peeled, cooked and mashed PLUS 1 sweet potato, peeled, cooked and very chunky mashed
¼ cup AP flour
1 stick unsalted butter, melted plus 2 tablespoons soften butter for the topping
½ cup raw sugar
½ cup dark brown sugar
½ teaspoon salt
1 lightly beat egg
1 teaspoon vanilla
½ cup whole milk
1 cup mini marshmallows
Preheat the oven to 350 degrees F.
In a large mixing bowl add in flour, raw sugar, dark brown sugar, beaten egg, vanilla and salt. Hand whisk to combine. Add in the mashed and chunky mashed sweet potatoes and stir to combine. Add in the whole milk and mini marshmallows. Gently fold into the sweet potato mixture. Transfer to a greased oven-proof deep dish. Top with pieces of soften butter.
Bake for 35 – 40 minutes or until the top is light crusted.
