Waldorf Tuna Salad

I love just a few fishes that I will eat. I do not like fresh tuna and have not eaten it but I love

canned tuna with oil/in water. My husband always said I am weird. There are more these kinds of large fish which I will not eat them. I am repelled from their smell while cooking. Well, this is just me and please do not get unhappy and disappointed.

I love to prepared dishes with canned tuna but I still fresh tuna on sushi and sashimi or pan fried for him. I came up with this salad because I have a one or two each stalks of celery, apples and bell peppers.

 

 

Makes: 6 Servings

Ingredients:

3 cans (6oz each) oil/light water packed tuna, drained and flaked

1 each large green and red apples, chopped

¼ cup chopped celery

1/3 cup chopped red bell peppers reserved some aside

¼ cup raisins

¼ cup cranberries

1/3 cup skinless slivered sliced almonds

1/3 cup mayonnaise

1½ tablespoons lemon juice

Salt and black pepper to taste

4 leaves lettuce/diced red bell pepper for garnishing (optional)

 

Method:

Combine the canned tuna, red and green apples, red bell peppers, raisins, cranberries, slivered almonds, salt and black pepper in a mixing bowl. In another small dish combine mayonnaise and lemon juice, stir well to incorporate well. Add to the tuna mixture and toss gently to coat. Garnish a few reserved red bell peppers.
